This wild sourdough culture was collected from traditional bakeries in Egypt that have preserved their bread making heritage for generations. With roots in antiquity, it carries forward the flavors and techniques of ancient traditions, awakening with vigor to create naturally leavened breads reminiscent of Egypt's long culinary history. This starter is rumored to have been maintained through Egyptian bakeries for 4,500-5,000 years, and the bakery I purchased it from claims it to be over a 5,000 years Old. Disclaimer: Unlike my other starters that are in the hundreds of years old and can be traced back to a specific bakery and origin, unfortunately the age of this starter cannot be confirmed because it is nearly impossible to reliably track it that far back. Biochemistry can identify which microbes are present in a starter, but there’s no way to timestamp them or verify that they’re genetically continuous with microbes from thousands of years ago. I can only verify that this starter is at least 30 years old. This starter however maintains very unique qualities compared to my other starters and makes fantastic, light, fluffy bread.
